I think for vegans one of the most difficult tasks is finding delicious food while traveling. Top that with the need to be gluten free and organic! An absolute NO. Does not exist. So I have learned to prep my meals when I travel. Most glut.free foods are full of sugar in cafes and vegan options mainly include wheat bread or other gluten. Sad really. Anyway, so here is what I packed for tomorrow when I fly home again: pressed juice of cilantro, ginger, carrots, beetroot and half of an apple. I added some lemon juice in the end. I will sip on this on my way to the airport. It will be way too early to eat. For my brunch ( not much of a breakfast person) I packed celery, almond butter, an avocado, some tofu and the rest of the apple. I love to munch on crunchy things 🙂 For desert, I packed some chickpea and coconut flower muffins I made a few days ago. They contain raspberries and blueberries but absolutely no sugar. All ingredients are organic, gluten and sugar free. Sure it takes time to prepare everything, but it is worth it. I take some green tea with me and I am set for a relaxing journey.
