Raw vegan lunch

After a 6 km walk on the beach we decided to make one of our favorite recipes, raw carrot soup with a twist. I just love my Vitamix. To this soup we add organic ingredients such as a handful of basil leaves, parsley, the juice of 1 lemon, 1 kg of carrots, 1 chili, 1 avocado, 1 red pepper, half of a garlic (yes!) 4 new onions and 2 tomatoes. I added approx. 700 ml of water in the end. Sometimes I add coconut milk, but today I felt a need something lighter. We usually leave salt out when we cook, salt can be added to everyone`s taste later. To serve, I add a bit of pumpkin oil on top, cherry tomato halves and a few slightly roasted pumpkin seeds as well. Vitamix makes the soup warm, but not hot, it is still raw, under 40 degrees. It is smooth and a bit frothy, I just love it!!!!
